This authentic guacamole recipe is the real deal, and just as you would find it in Mexico. It should have a chunky yet smooth texture, so try not to over mash the avocados.

Makes 2 cups

3 ripe avocados, halved
Juice of 2-3 limes
1 medium tomato, seeds removed, finely diced
1 small red onion, finely diced
1/3 cup chopped fresh coriander
Salt, to taste
1 chilli, finely chopped (optional)

1. Use a spoon to scoop out the avocado flesh onto a plate. Use a fork to coarsely mash the avocado, adding the juice of one lime immediately, to prevent browning.

2. Add tomato, onion and coriander and gently stir together. Add the juice of another lime or two, to taste, and season well with salt. Add chilli if desired.

3. Gently stir together so the guacamole keeps a coarse texture. Serve as a dip (its great with our Beer Crackers), or use alongside your favourite Mexican dish.
