This tangy sauce is a bit like satay sauce only it is based on NZ macadamia butter, instead of peanut butter, which gives it an extra delightful creaminess.
1 tbsp olive oil
1/2 small onion, finely chopped
2 garlic cloves, crushed
1 small red chilli, finely chopped
1/4 cup Good Grocer Macadamia nut butter
1 tsp honey
1/2 cup water
Juice of 1-2 limes
Salt, to taste
12 Good Grocer chicken kebabs
1/3 cup chopped fresh coriander
1. To make the sauce, heat oil in a pan over medium heat. Add onion and cook, stirring, for 5 minutes or until softened. Add garlic and chilli and cook for 1 minute, until aromatic. Remove from heat.
2. Add the macadamia nut butter and stir to combine. Place pan over low heat. Add honey, water, lime juice and season with salt to taste. Cook, stirring, for 3-4 minutes or until sauce thickens.
3. Cook kebabs on a hot barbecue or under a pre-heated grill for 2-3 minutes on each side. Sprinkle with coriander and serve hot with sauce on the side, to spoon over.
