Makes glaze for up to 2 rib racks
1-2 pork rib racks
2 cups hot water
1 head Black Garlic, divided into cloves
1/2 cup Good Grocer HG Sauce or Tomato ketchup
1/3 cup lime juice
1/3 cup honey
1 red chilli, finely chopped
1 tsp smoked paprika
1 tbsp chopped fresh oregano leaves
¼ tsp each salt and freshly ground black pepper
1. Preheat oven to 180°C. Place the ribs in a roasting pan, pour over the water and scatter with garlic cloves. Cover pan with foil and bake, turning once, for 2 hours or until tender.
2. Meanwhile, make the BBQ glaze. Place HG sauce, lime juice, honey, chilli, paprika, oregano, salt and pepper in a saucepan; stir over low heat for a minute, to combine. Increase heat and simmer hard for 5 minutes, or until thickened.
3. Remove the cooked ribs from the pan. Squeeze the garlic pulp from the cloves and stir pulp into the glaze mixture. Brush ribs generously with glaze.
4. Preheat a barbecue grill or chargrill to medium. Cook ribs for 3-4 minutes on each side or until caramelised and slightly charred. Transfer to a board and use a large sharp knife to cut between the ribs.
