LEMON & THYME CHICKEN

Serves 4
4 free-range, skinless chicken breasts
Finely grated zest and juice of 1 lemon
2 tbsp olive oil, plus extra for drizzling
2 cloves garlic, crushed
Sprigs of fresh thyme
Baba ganoush, to serve (see separate recipe)
1. Combine the lemon zest and juice, olive oil, garlic and thyme in a ceramic dish. Add the chicken breasts and turn to coat in the mixture. Cover and leave to marinate and come to room temperature for 30 minutes.
2. Preheat a barbecue or grill pan. Season the chicken on both sides, then cook for 6-8 minutes on each side, or until cooked through.
3. Serve the chicken on a generous dollop of Baba Ganoush (see separate recipe), a drizzle of extra virgin olive oil and some micro salad leaves.
