Italian in origin, peperonata is a rustic dish of stewed peppers and makes a great side to our tasty Good Grocer sausages.

Serves 4

3-4 tbsp olive oil
1 red onion, finely sliced
2 cloves garlic, chopped
2 red peppers with seeds removed, finely sliced
2 tbsp red wine vinegar
Salt and freshly ground black pepper
8 Good Grocer sausages
3 tbsp chopped Italian parsely, to garnish
1 loaf Amano ciabatta bread

1. Heat oil in a frying pan, add onion, garlic and peppers. Cook over a medium heat for 10-15 minutes, stirring regularly, until the vegetables have softened.

2. Raise the heat, add the vinegar and toss over high heat for 1-2 minutes or until the vinegar has evaporated. Season well with salt and pepper and transfer to a bowl.

3. Preheat a BBQ or add a little more oil to the same pan. Prick sausages all over with the tip of a sharp knife and then cook, turning regularly, for 10 minutes, or until browned all over and cooked through.

4. Serve sausages with peperonata on the side. Garnish with parsley. Serve with Amano ciabatta bread, to mop up the juices.
