300gm Good Grocer Spaghettoni pasta
300gm kale or cavolo nero, trimmed of stems, chopped
2 cloves garlic, peeled
40gm grated NZ parmesan cheese
3-4 tbsp extra virgin olive oil
1. Cook pasta in gently boiling, salted water for 10 minutes or until al dente (just tender to the bite). While the pasta is cooking, prepare the sauce.
2. Cook the kale and garlic in boiling, salted water for 2 minutes. Drain well, reserving a 1/4 cup of cooking liquid.
3. Place kale and garlic in a food processor and process to chop. Add parmesan and oil and process to a smooth paste, adding a little extra cooking liquid to thin, if necessary. Adjust seasoning with salt and pepper.
4. When pasta is cooked, drain and return to the pan. Pour over the kale sauce and toss well to coat. Serve immediately.
