1 large bulb fennel
Juice of 1 lemon
1 large carrot, peeled
1 watermelon radish
1/4 cup chopped parsley or coriander
NZ sea salt and freshly ground black pepper
100 gm Good Grocer Goddess Dressing
6 Good Grocer Wagyu slider patties
150 gm Peppered Havarti cheese, thinly sliced
6 Good Grocer slider buns, cut in half
Good Grocer Tomato Ketchup
Finely slice the fennel with a knife or mandolin slicer. Place sliced fennel in a bowl of cold water with the juice of a lemon to stop the fennel browning.
Julienne the carrot and radish. Drain fennel and combine with remaining slaw ingredients. Season with salt and pepper and toss with Goddess Dressing to coat.
Preheat a grill on high. Heat a pan with a little oil and cook slider patties for 1-2 minutes on each side or until cooked to your liking. Place patties onto a rack set over an over pan. Place a portion of cheese on top of each pattie and grill for a couple of minutes until cheese melts.
Place hot cheesy patties onto slider bun bases. Top with a spoonful of Fennel Slaw and a good dollop of Tomato Ketchup. Devour immediately!
