Roasting is an easy and tasty way to cook sausages. The cooked apples act in a way like chutney, adding moisture and a sweet and sour fruitiness to this rustic, one-dish, family meal.
6 Good Grocer sausages (pork, beef, lamb or chicken)
6 rashers middle bacon, rind removed
3 medium kumaras, peeled and cut into large chunks
2 small red onions, cut in wedges
4 bay leaves
2-3 tbsp olive oil
NZ sea salt and freshly ground black pepper
2 unpeeled red apples, cut in wedges with cores removed
1. Heat oven to 220°C. Wrap a slice of bacon around each sausage as best you can and place in a roasting pan.
2. Scatter the kumara, red onion and bay leaves around the sausages, drizzle all over with oil, season with salt and pepper and roast for 20 minutes.
3. Scatter apple wedges around the sausages and vegetables in the pan. Roast for a further 15 minutes, or until the sausages are browned, the kumara is cooked through and the apples caramelised.
