Fuji apples are perfect for baking whole, as they retain their shape nicely. Their superb, sweet-tart taste works well with this fruity, honey-nut stuffing.
4 Fuji apples
35 gm Good Grocer Cinnamon & Honey Butter, chopped
35 gm NZ walnuts, chopped
50 gm dried dates, chopped
Finely grated zest of 1 lemon
2-3 tbsp Good Grocer Blackcurrant Honey
Good Grocer Crème Fraiche, to serve
1. Preheat oven to 180°C. Use a sharp knife or apple corer to carefully remove the cores from the apples, taking care not to split them in half. Place the apples in a baking dish.
2. Combine butter, walnuts, dates and zest in a small bowl and toss to mix.
3. Divide mixture by 4 and tightly pack one portion into the cavity of each apple, then drizzle with honey. Scatter any left over mixture into the dish.
4. Bake for 30 minutes. Serve each apple with a big spoonful of crème fraiche and any sticky juices from the baking dish.
