ROAST BACON-WRAPPED BEEF EYE FILLET

ROAST BACON-WRAPPED BEEF EYE FILLET

Serves 6
1 kg Good Grocer bacon-wrapped beef eye fillet
NZ sea salt and freshly ground black pepper
Olive oil
350g baby carrots, scrubbed clean
350g baby beetroots, scrubbed clean
A few bay leaves
4 tbsp balsamic vinegar
1 tbsp honey
½ cup Good Grocer Chimmichuri 

1. Preheat oven to 200°C. Season beef with salt and pepper. Heat a little oil in a frying pan with an ovenproof handle set over high heat. Add the beef and cook for 4-5 minutes, turning to brown all over. 

2. Place in the oven to roast, allowing 20 minutes per 500gm for medium-rare, or until cooked to your liking. Remove beef from pan and transfer to a plate. Cover loosely with foil and set aside to rest for 10-15 minutes.

3. For the vegetables, combine carrots, beets and bay leaves in a bowl. Drizzle with oil, balsamic, and honey and season with salt and pepper. Toss together, then scatter over a baking tray lined with baking paper. Roast for 30 minutes, or until tender.

4. Remove string from the beef, then carve into thick slices. Place on a serving platter with the vegetables. Spoon some chimmichuri over the beef and serve extra on the side.
