2 x Good Grocer thick-cut dry-aged T-bone steaks, at room temperature
NZ sea salt and freshly ground black pepper
1 knob Good Grocer herb butter
HG sauce, to serve
1. Heat a large frying pan set over a high heat, or preheat a barbecue. Rub the steaks all over with oil and season well on both sides with salt and pepper.
2. Place the steaks immediately into the very hot pan or onto the barbecue, and then turn down the heat to medium. Cook for 3-4 minutes, depending on the thickness of the steaks.
3. Turn the steaks over and finish by cooking for 3-4 minutes on the other side (for medium-rare), or longer, according to your preference.
4. Remove steaks to a plate to rest for 5 minutes, covered with a loose sheet of foil. To serve, top each steak with a knob of herb butter and serve HG sauce on the side, to spoon over.
