BRAISED LAMB SHANKS

Serves 2

Ingredients:

- 2 lamb shanks
- 1 sprig rosemary
- 1 white onion, sliced
- 2 cloves garlic, crushed
- 1 carrot, diced
- 1 stick celery, diced
- 1/4 cup red wine
- 500mL bottle Good Grocer Passata
- 1 cup chicken stock
- Sea salt & freshly ground black pepper

 

Method:

Heat oven to 160C. Heat a crock-pot with 2 tbsp of oil over medium heat. Sear the lamb shanks in the heated crock-pot.  Add the vegetables and rosemary and cook for 5 minutes. Add the red wine and bring to the boil. Add the bottle of passata and chicken stock to the pot. Cover with a lid or tinfoil. Place in oven for 2.5-3 hours until the meat is tender and coming away from the bone. (If sauce is too runny reduce on the stovetop on medium heat for 10 minutes until thickened.)Season with sea salt and pepper.
